Stews are the star of family dinners, and not just because of the multiple servings. The savory, savory, comforting goodness of the food is what makes those servings go missing every time! This Pizza Chicken Casserole recipe deserves a spot in your personal casserole catalog. (Or isn’t that something normal people have?)

Pizza Chicken Casserole

Makes 4 servings
Preparation time: 15 minutes; Cooking time: 40 mins; Total time: 55 minutes

Ingredients

  • 1 lb raw boneless, skinless chicken breast
  • 1/8 tsp each salt and black pepper
  • 1/2 cup light/reduced-fat cream cheese, room temperature
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1 1/2 cups chopped mushrooms
  • 3/4 cup chopped green pepper
  • 3/4 cup low fat marinara sauce
  • 1/2 cup shredded part skim mozzarella cheese
  • 3/4 oz. (about 12 slices) turkey pepperoni, coarsely chopped
  • Optional garnish: sliced ​​black olives

directions

  1. Preheat the oven to 350 degrees. Spray an 8″ X 8″ baking dish with nonstick spray.
  2. Flatten the chicken to 1/2 inch thick. Season with salt and black pepper. Heat a very large skillet sprayed with nonstick spray over medium heat. Cook about 4 minutes on each side, until cooked through. Transfer to a cutting board.
  3. Meanwhile, in a large bowl, combine cream cheese with 1/4 tsp. garlic powder and 1/4 tsp. onion powder. Stir until smooth and uniform.
  4. Remove skillet from heat; clean, if necessary. Spray again and bring to medium-high heat. Add mushrooms and bell pepper and sprinkle with 1/4 tsp. remaining tsp. garlic powder and 1/4 tsp. onion powder. Cook and stir until slightly softened and lightly browned, about 6 minutes.
  5. Transfer the contents of the skillet to the bowl with the cream cheese mixture. Mix well.
  6. Chop the chicken and place it evenly in the baking dish.
  7. Top chicken evenly with creamy vegetables, marinara sauce, mozzarella and chopped pepperoni.
  8. Bake until the entire dish is hot and bubbly and the mozzarella has melted, 20 to 25 minutes.
