Upside-Down Chicken Enchiladas Recipe, No Tortilla: ObesityHelp

Tortillas are delicious, but when it comes to enchiladas, they’re basically there to hold the fillings in place until they’re cooked. After baking, these tortillas disintegrate and melt into the sauce and cheese. In this recipe, no tortillas are needed because a chicken exterior saves the day! This recipe for upside-down chicken enchiladas is not only healthy, but delicious too!

Upside-Down Chicken Enchiladas

Makes 4 servings
Preparation time: 15 minutes; Cooking time: 25 minutes; Total time: 40 minutes

Ingredients

  • 1/2 cup refried beans
  • 1/4 tsp. chili powder
  • 1/2 tsp. cumin powder
  • 1/4 tsp. salt
  • 1/2 cup shredded low-fat Mexican cheese
  • Four 5 oz. raw boneless skinless chicken breast cutlets, pounded 1/4 inch thick
  • 1/8 tsp black pepper
  • 1/4 cup red enchilada sauce
  • 1/4 cup chopped green onions
  • Optional garnishes: light sour cream, sliced ​​black olives, fresh cilantro

directions

  1. Preheat the oven to 400 degrees. Spray an 8″ X 8″ baking dish with nonstick spray.
  2. Place beans in a medium bowl. Add chili powder, 1/4 tsp. cumin and 1/8 tsp. salt. Mix well. Stir in 1/4 cup cheese.
  3. Season the chicken with pepper, the 1/4 tsp. remaining tsp. cumin, and 1/8 tsp. remaining tsp. salt. Divide the bean mixture evenly between the centers of the cutlets.
  4. Gently roll each chicken cutlet over the mixture. Secure with toothpicks. Place the cutlets in the baking dish. Pour sauce over chicken and top with remaining 1/4 cup cheese.
  5. Cover the dish with aluminum foil.
  6. Bake for 25 minutes or until chicken is cooked through and cheese is melted.
  7. Garnish with green onions.
